עוגת תפוחים
חומרים (לתבנית 24 ס"מ):
3 תפוחי עץ בינוניים (אני מעדיף גראני סמית) - קלופים, מגולענים וחתוכים לקוביות קטנות
200 גרם סוכר חום (אני ערבבתי סוכר חום עם סוכר דמררה ביחסים שווים)
120 מ"ל שמן צמחי (קנולה, למשל)
2 כפיות קינמון טחון
1 כפית משחת וניל (או תמצית וניל)
2 ביצים
60 מ"ל חלב
180 גרם קמח
כף אבקת אפייה
1/2 כפית מלח
הכנה:
שמנו את התבנית וחממו את התנור ל-180 מעלות צלזיוס.
ערבבו במיקסר (בוו גיטרה) את הסוכר, השמן, הקינמון והווניל. הוסיפו את הביצים אחת-אחת, וערבבו את התערובת מחדש אחרי כל ביצה. הוסיפו חלב, קמח, אבקת אפייה ומלח. ברגע שהעיסה מתאחדת, הפסיקו את הערבוב, כי אבקת האפייה מתחילה לעבוד, ורצוי להתחיל את האפייה מהר. הוסיפו את תפוחי העץ הקצוצים וערבבו בכף, שפכו את התערובת לתבנית המשומנת ואפו 30-35 דקות.
זה טעים אש. במקור מציעים להגיש עם ציפוי קרמל או קצפת מתוקה, אבל לטעמי העוגה מתוקה גם כך ואין כל צורך להוסיף עוד מתוק. כמובן, תוספת גלידה דווקא יכולה להיות מוצלחת...

השבמחקאני מבין ללבך, אבל לפחות לא נתתי במתכון זוועות כמו "70 גרם חלבון" - והאופים המקצועיים מדייקים עד כדי כך, לא סתם סופרים חלבונים, חלמונים או ביצים שלמות.
הבעיה ב"כמויות מידה" היא שהן תלויות בגודל הכוס שמשתמשים בה. ולרוע המזל, יש כמה כוסות שונות שכולן "סטנדרטיות" - האנגלית והבריטית הן שונות, ובארץ אפשר לדעתי להשיג כלים מכל סטנדרט. גרוע מזאת, במקרה של סוכר למשל, הנפח שלו תלוי בגודל הגרגרים שלו, לכן בכוס של סוכר חום יש משקל אחר של סוכר מאשר בכוס של סוכר לבן, סוכר דמררה, או בכוס של אבקת סוכר.
יש הרבה מתכונים שבהם זה לא נורא משנה אם משתמשים בכוס קצת יותר קטנה או גדולה, אבל באפייה אני במיוחד מקפיד על דיוק כי המתכונים פחות סלחניים.
חוץ מכל זה, אני נותן פה את המתכון בדיוק כפי שהיה במקור - זה לא מתכון שלי...

השבמחקלפני שנים רבות ביקשתי מביגל מתכון לעוגת גזר. הילדים אוהבים גזר וגם עוגות אז רציתי לשלב. ביגל מיד החלה במשימת איתור מתכון מצטיין. חיפשה, חיפשה, בדקה, ניפתה (אפתה בעצמה?) ורק אחרי שוידתה שאחותה המוגבלת תצליח (מאותגרת אפיה?) להתמודד עם המתכון התקשרה אלי והחלה להכתיב. כשהגיע לשלב ה- 110 גרם חמאה צייצתי: "לא תוכלי לת לי ביחידות? כוס סוכר, חצי חבילת חמאה וכו'?". הדממה בצד השני של הקו לא בישרה טובות. ואז, אחרי מספר שניות שאלה ביגל בקול יותר צונן מהקוטב הדרומי בחורף (של חצי הכדור הדרומי): "רגע, אין לך משקל במטבח?"
אני: "לא, למה? את חושבת שכדאי לקנות?"
ביגל: "אני מצטערת, אבל אני לא יכולה לתת לך מתכונים. לאפייה את חייבת משקל. אי אפשר "בערך". אז עד שלא תקני משקל אל תבקשי ממני. תמסרי ד"ש לבעל ולילדים." וסגרה את הטלפון.
המומה לגמרי מיהרתי לחנות הקרובה במצוות אחותי וקניתי משקל. דיגיטלי. עם דיוק של גרם. הכל כדי לזכות באישורה של אחותי האהובה...
